This recipe is souper easy! When you need a hearty soup for Winter, or when you need that soup fix in the Summer but don't want to heat the house up with boiling pots on the oven. I like to keep most of the ingredients in my pantry and with this recipe you can. Did I mention that one crockpot of this stuff is only about 1200 calories? So you can get plenty of this stuff without ruining your diet plan. It keeps to a low carb diet and is packed with the veggies and protein you need to keep up with your active lifestyle... wow that's the salesperson coming out right there...

Ingredients
- 1 Can of Rotel tomatoes diced with green chiles (green chile optional)
- 1 Can of diced Tomatoes
- 1 Can of Corn
- 1 Can of Cut Green Beans
- 4 stalks of Celery (not to be confused with four whole things of celery)
- 4 carrots
- 2 Medium Sized Chicken Breasts
- 1 Onion
- 2 Handfuls of Chopped Kale
- 2 Cans of Chicken Broth (I Like Central Market Organics Chicken Broth)
- 1 Can of Beef Broth
- Cajun Seasoning (I use Chachero's, but good ole salt and pepper works just fine)
Dishes Needed
- Cutting Board or Chopping Block
- Large Sharp Knife
- Crockpot
- Can Opener
- Frying Pan
- Spatula or Spoon
Directions
- Slice chicken breasts and cook in frying pan with a little Olive Oil until fully cooked.
- Dice Onion, Carrots, Celery, and Chop Kale.
- Open Cans
- Put it all in the crockpot with a dash of Cajun Seasoning or Salt & Pepper. (DO NOT PUT UNCOOKED CHICKEN IN CROCK POT. COOK IT FIRST).
- Turn Crockpot on High, let cook for two hours or cook on low overnight before serving.
- Store in fridge for up to a week
